If you've never had microgreens before, the first question is almost always the same: do I need to cook these?

Nope. Microgreens are a raw food, full stop. They're harvested young and tender, which means they're ready to eat the moment they land in your kitchen — no prep, no heat, no extra steps between the fridge and your fork.

Why raw actually matters here

Microgreens are delicate by nature. That's part of what makes them good — the texture is soft but still has a bit of crunch, and the flavor is more concentrated than you'd expect from something so small. Heat works against both of those things: it wilts the texture and can break down some of the nutrients that make microgreens worth eating in the first place. So rather than being an inconvenience, "eat it raw" is really just the best way to get the most out of them.

Are they safe to eat raw?

For most healthy people, yes, and it's worth knowing why microgreens sit in a different category than sprouts, even though people often confuse the two. Sprouts are grown quickly in water and eaten whole, including the root — which is why they're treated as a higher-risk food. Microgreens are grown differently, over a longer window with proper airflow, and only the leaves and tender stem are ever harvested. That distinction is a big part of why microgreens are considered a safer, more everyday raw food.

A few simple things worth keeping in mind:

  • Give them a quick rinse right before eating, not before storing — extra moisture in the container just shortens how long they stay fresh

  • Buy from a source you trust that follows clean growing practices — which, fair warning, is basically us telling you to buy from us, but it's also just good general advice

  • If you're pregnant, immunocompromised, or feeding a very young child, it's always worth checking with your healthcare provider about raw produce in general, the same way you would with any fresh vegetable

How to actually use them

The easiest way to think about microgreens is as a finishing touch, not a cooked ingredient. A few of our favorites:

  • Piled onto a sandwich or wrap in place of lettuce

  • Scattered over eggs right before serving

  • Blended into a smoothie for an easy nutrition boost

  • Tossed into a salad or grain bowl for extra texture

  • Layered onto avocado toast, pizza, or pasta right at the end

The rule of thumb: add them last, after the heat, not during cooking. Think of them the way you'd think of a fresh herb — better added at the finish line than thrown into the pot.
